Passion Fruit Macarons

If you follow me on social media you will know that I posted these at the beginning of Spring, around Easter time. There’s something about the sun coming out for the first few days since winter that makes me want to make something light and special!

These macarons are one of the easiest recipes out there, which for macarons is usually difficult to find! Filled with a tangy passionfruit curd, these are perfect for spring/summer BBQ’s or a gift for a loved one and is the perfect base recipe for you to add different flavourings and colours so get creative!

Pot of Gold at the End of the Rainbow Cupcakes

Happy St. Patricks Day! A day I personally do not celebrate, but always seem to end up in a pub (that’s normal, right?). This year though I opted for a less alcoholic way to celebrate by creating some St. Paddy’s Day chocolate cupcakes!

P&J Cookies – A Twist on the classic Jammie Dodger

Anyone else here absolutely obsessed with Jammie Dodgers when growing up? They were the ultimate childhood biscuit and it was my mission to nibble all of the bisuit away before devouring the gooey jam middle.

These biscuits are a twist on the classic, adding original American flavour pairing peanut butter and jelly (jam for us Brits). They are crunchy on the outside, and oozy in the middle and the add of peanut butter really steps this biscuit up to a new level!

40 Day Meat Free Challenge, Updates

40 Days Meat Free Challenge – First 7 Days

For anyone who doesn’t follow my social media, I have decided to give up meat for Lent. I wouldn’t call myself a huge meat lover, but most of my midweek meals always include chicken and I rarely think of ordering a vegetarian (or fish) meal when I go out to a restaurant.

To Mother Earth (2)

Every week, I will be posting about how I’m getting on and what kind of new meals I’m eating. The best way to stay up to date is through my instagram: merakibaking. Follow along if you like and let me know if you have any recipes or inspiration on things I could try! This post is about the first 7 days being meat free.

Banana Loaf with Toffee Sauce

IMG_9106

The best way to use up bruised and old bananas is in a loaf cake! Never throw away older looking bananas again, as they give the best flavour for this recipe!

Covered in toffee sauce, this banoffee type loaf is so scrumptious perfect for all the family. I have also created my first ever baking video, so check it out! It’s not the best but I can’t wait to learn and imprive as I think videos make the steps come to life and the recipe is just easier if you can watch someone making it!

Caramelised Banana and Custard Pancake Stack

So yes, I did just post a “healthy” recipe for pancake day but now… it’s time for the SINS! Because lets face it, nothing is better than treating yourself to something oozy and delicious after a horrible wet rainy day in the UK.

These are the ULTIMATE sweet treat for a day like pancake day which all the family (especially the kids and big kids like me) will enjoy. The caramelisation of the banana melts into the vanilla custard which is just so darn good!!
