Vegan Doughnut Holes

This was my final Veganuary recipe I made and I can honestly say it was also the BEST! I have made many vegan savoury dishes but haven’t really focused to heavily on sweet vegan recipes. I have tried vegan waffles and cookies which came out delicious but I still wasn’t convinced that those vegan desserts were BETTER than non-vegan ones until I tried these doughnuts. These doughnuts are honestly better than normal doughnut holes I’ve made before. They may not be as fluffy but they are super crispy on the outside, the taste is amazing and they are perfect to dip in all sorts of dips and I would choose to make these not as a “replacement” for normal doughnuts, but because this recipe is just delicious but also happens to be vegan at the same time!

Vegan Peanut Butter Waffles

Hello Veganuary! Anyone else feel like Veganuary has become huge this year, 2019? With Greggs releasing their infamous vegan sausage roll that all of us were waiting for as well as large companies like Pizza Hut and McDonalds also adopting vegan dishes, the amount of vegan conversations I’ve seen on social media is insane!

For Veganuary I wanted to create something that even non-vegans would be tempted to try. These waffles look and taste just like normal waffles (if not better). They are more dense, like a sweet bread rather than light and fluffy but the peanut butter makes them sweet and nutty. These would be perfect on their own with a sprinkle of fruit (or any toppings of your liking) but I also made a Maple Peanut Butter Syrup to drizzle over… which believe me, makes this dish!

Vegan Chocolate Chip Cookies

It’s vegan week this week of the Bake Off and what an inspiring week! I am not personally vegan myself, but have always been fascinated at vegan food, with the substitutes for animal products including meat and dairy! This weeks episode showed me something i’ve never seen before and that’s using aquafaba in replacement of eggs. This was used for making fluffy meringue which made me wonder, can it be replaced in any recipe? And hello chocolate chip cookies!

Lemon and Elderflower Traybake

It’s the second week of The Great British Bake Off! Who is loving it so far? My favourites at the moment are Manon (no not just because she looks like me haha) as well as Kim-Joy, Jon and it’s a choice between Rahul or Briony! Either way, they are all great personalities this year and I’m enjoying watching them all so much!

The signature challenge this week was tray-bakes so I decided to make my own creation and as the sun is still out and the UK is looking like it’s going to get an Indian summer, I thought I’d stick with the summer flavours and play around with lemon and elderflower!

Lemon Macarons with Swiss Meringue Buttercream

After finally mastering the macaron after plenty (and i mean PLENTY) of tries and fails, I have FINALLY been able to actually test new flavours and fillings. After making my Passionfruit Macarons which turned out so delicious, I wanted to make another flavour which was just as tasty.

Thats where these babies come in. When I first thought of doing a lemon macaron, I wanted to have a lemon macaron shell and a lemon filling. One of the most difficult things to make is a macaron shell and when I started adding lemon zest to them, they came out all bumpy and liquid flavourings would make the mixture runny. I decided that the macaron shell itself needed to be a normal macaron shell, coloured yellow and then the filling is what will pack a punch of flavour.

Marble Cake

Marble cake is my favourite! And especially good when you love both chocolate and vanilla cakes and you find it difficult to choose which one to have!! This cake is very simple, with no real icing on top just a drizzle of both white and milk chocolate. You can cut this cake in half and fill/cover with a chocolate buttercream if you like, like this recipe by Sallysbakingaddiction!

Gigantes Plaki – Giant Greek Beans (Vegan)

Gigantes plaki is a classic Greek dish, consisting of ‘giant’ white beans cooked in a tomato sauce with lots of fresh herbs. This recipe packs a punch on the flavour side and whilst traditionally can take a long time to make, my speedy recipe will have you eating these as a quick, easy weekday meal!
