These three flavours are one of my FAVOURITE combos of all time – especially when it starts getting closer to the summer!The citrus of the lemon, with the crunchy pistachios and then the luxurious creamy taste of the white chocolate goes perfectly in this soft, chewy cookie!

These are not your classic crunchy cookies. They are super soft, with a slight crunch on the outside and honestly do not last 5 seconds in my household! Also – the SMELL when baking these are too divine!

White Chocolate Mud Cake

Mud cake, mud cake, mud cake… I’ve heard this word used over and over again and I finally got round to making what is possibly the BEST sponge cake I have EVER Eaten! Yes, that good! Now I’m kicking myself for ever waiting this long to try it! For anyone who doesn’t know, a mud cake has a very tight crumb meaning it carves very nicely and stays together without falling apart. It’s also perfect for tiered cakes as it is strong enough to hold a lot of weight!

Lemon Macarons with Swiss Meringue Buttercream

After finally mastering the macaron after plenty (and i mean PLENTY) of tries and fails, I have FINALLY been able to actually test new flavours and fillings. After making my Passionfruit Macarons which turned out so delicious, I wanted to make another flavour which was just as tasty.

Thats where these babies come in. When I first thought of doing a lemon macaron, I wanted to have a lemon macaron shell and a lemon filling. One of the most difficult things to make is a macaron shell and when I started adding lemon zest to them, they came out all bumpy and liquid flavourings would make the mixture runny. I decided that the macaron shell itself needed to be a normal macaron shell, coloured yellow and then the filling is what will pack a punch of flavour.

P&J Cookies – A Twist on the classic Jammie Dodger

Anyone else here absolutely obsessed with Jammie Dodgers when growing up? They were the ultimate childhood biscuit and it was my mission to nibble all of the bisuit away before devouring the gooey jam middle.

These biscuits are a twist on the classic, adding original American flavour pairing peanut butter and jelly (jam for us Brits). They are crunchy on the outside, and oozy in the middle and the add of peanut butter really steps this biscuit up to a new level!
