White Chocolate Mud Cake

Mud cake, mud cake, mud cake… I’ve heard this word used over and over again and I finally got round to making what is possibly the BEST sponge cake I have EVER Eaten! Yes, that good! Now I’m kicking myself for ever waiting this long to try it! For anyone who doesn’t know, a mud cake has a very tight crumb meaning it carves very nicely and stays together without falling apart. It’s also perfect for tiered cakes as it is strong enough to hold a lot of weight!

Lemon and Elderflower Traybake

It’s the second week of The Great British Bake Off! Who is loving it so far? My favourites at the moment are Manon (no not just because she looks like me haha) as well as Kim-Joy, Jon and it’s a choice between Rahul or Briony! Either way, they are all great personalities this year and I’m enjoying watching them all so much!

The signature challenge this week was tray-bakes so I decided to make my own creation and as the sun is still out and the UK is looking like it’s going to get an Indian summer, I thought I’d stick with the summer flavours and play around with lemon and elderflower!

Marble Cake

Marble cake is my favourite! And especially good when you love both chocolate and vanilla cakes and you find it difficult to choose which one to have!! This cake is very simple, with no real icing on top just a drizzle of both white and milk chocolate. You can cut this cake in half and fill/cover with a chocolate buttercream if you like, like this recipe by Sallysbakingaddiction!

Banana Loaf with Toffee Sauce

IMG_9106

The best way to use up bruised and old bananas is in a loaf cake! Never throw away older looking bananas again, as they give the best flavour for this recipe!

Covered in toffee sauce, this banoffee type loaf is so scrumptious perfect for all the family. I have also created my first ever baking video, so check it out! It’s not the best but I can’t wait to learn and imprive as I think videos make the steps come to life and the recipe is just easier if you can watch someone making it!

GBBO Challenge Week Eight – Forgotten Bakes – SAVOY!

What the **** is a savoy cake? Anyone else feel the same way? I hope so, because this week I was left completely flabbergasted at some of the things being made, which is why I think they named it forgotten bakes…

savoy8

This weeks recipe is taken from Kate’s Pecan Savoy Cake, which was actually enormous on the show, but the recipe cuts it down to one simple sponge. However, I didn’t bother with the chocolate decoration, I stuck to a simple coating of icing sugar and fresh berries (and then ate it with a pool of custard!!)

Cake Pops from Leftover Cake!

final1

This is a super quick and easy recipe if you have leftover cake from trimmings or if you’ve made too many layers and want to use one to make something else! Whatever the reason, this recipe is for people who have none of the fancy cake pop utensils and just want something to make instead of throwing away good cake!

The Perfect Fluffy Chocolate Sponge

fluffysponge2.jpg

Chocolate Cake, it’s delicious, decadent and we just can’t get enough of it! But boy are they hard to perfect! Too bitter, too sweet, too stodgy. I’ve eaten them all! Until I came across this recipe by the magnificent MARY BERRY and adapted it slightly to perfect the ultimate chocolate sponge!
