What could possibly be better than a brownie? How about TRIPLE LAYERS with a peanut butter fudge and a melted chocolate topping?! Yes please…
I made these for National Fudge Day, but these are the perfect indulgent treat for anytime of the week and make great homemade gifts!
These are super simple to make, but take quite a while as you have to make sure each layer is set before moving on, starting with the brownie base. Just melt all the ingredients together, whisk in a few eggs, bake and walaaaah! a beautiful moist fudgey brownie base
While the brownie is cooling, make the fudge layer. This is made using carnation milk and is again super simple, just watch out as it can burn easily! Then pour this over the cooked and cooled brownie base and leave to set
How are you all feeling? It’s been so hot and dry here in the UK I am slightly wishing for a little touch of rain (No AC here, what are we like?!). Other than that, I am enjoying the sun so much! Fresh fruit, cocktails, sunbathing ahhhh it’s the life!
Now for these brownies, the last layer is up to you! Add white chocolate, dark chocolate, whatever you prefer. I tend to use mainly milk chocolate with a small bit of dark to get the perfect balance and I drizzled mine with some white chocolate and topped with chopped toasted peanuts!

For the brownie layer:
- 175g Unsalted butter
- 300g Golden caster sugar
- 80g Cocoa Powder
- 50g Dark chocolate
- 2 tsp Vanilla extract
- 2 Medium eggs
- 50g Plain Flour For the peanut butter fudge layer:
- 1 Tin (397g) Carnation condensed milk
- 150g Smooth peanut butter (I use Whole Earth)
- 1 tsp Vanilla extract
- 50g Butter
- 200g Icing sugar For the chocolate topping layer:
- 100g Milk chocolate
- 50g Dark chocolate
- 50g White chocolate
- Handful of chopped peanuts
- Any chocolate can be used for the topping depending on your taste buds.
- Decorate brownies with anything you like including shaved chocolate, other chopped nuts or even freeze dried raspberries for a fruit twist!
